Reminded me of my travels to Bahamas in the early 80's when conch and grouper were plentiful and on most menus.

I'll second that. I wouldn't cut a hole in the cockpit sole because I wouldn't be confident that I could properly seal it and I'd be concerned that I would weaken it. I tried a similar one on my prop but it wouldn't budge.
And I tried a homemade one (see picture) but it failed also.
