Andy,
I also turn a 12x9 propellor. I tried going a little more aggressive with the pitch for one season...but the engine wouldn't run up to it's recommended 3500-3600 WOT. I'm now in my 6th season (200 total hours) with the BZ482 and it's never skipped a beat.

Origo stove
I would go with either the single burner 1500 or the two burner 3000. I own an Origo and I'm impressed with it's ability to generate heat. It'll boil a quart of water in just a few minutes. I would recommend removing the fuel canisters if you plan to store the stove on it's side.

Plastic electricians tape used as masking tape
Plastic electricians tape makes an EXCELLENT masking tape. It's flexible and goes around curves quite easily. It leaves an extremely clean line as long as its put down properly on a clean surfce. It's also resistent to solvents.

Rustoleum is great paint for the boot stripe
I used Rustoleum Leather Brown (alkyd enamel) to paint the boot stripe on my last two Cape Dorys. No primer...I just masked off the hull, lightly sanded the original red bootstripe and rolled on the Leather Brown with a foam roller. It's been on there for 7 years and still looks fresh.

Bent nail technique - best for balsa core

I've used the bent nail technique on probably 20-25 holes that all were admitedly in balsa core. I had excellent results with all of them.

Another way to skin the cat
First, I drill down through the top laminate (above the balsa or other core) typically with a 1/4" drill bit. Next I put a "L" shaped bent nail into my drill chuck and work it down into the core and use the drill to grind and loosen the core creating a pocket about 1" in diameter...

repair idea
After hearing the description of the problem and seeing the photos I would suggest the following. Place a heavy weight over the affected area and then wait through the winter months for the deck to return to it's original height. I would protect the deck with a piece of flexible plywood (1/4"?)...

Do not used galvanized pipe for exhaust
FYI...do not use galvanized pipe for exhaust plumbing. The heat will cause the zinc coating to give off toxic fumes.

my experience
What year is your boat? Cape Dory changed things from year to year. My CD27 (hull #167) has the head mounted with (4) 1/4" lag bolts that screw into what I believe to be a piece of plywood that was molded into the fiberglass hull liner.
