I would be very interested to hear from anyone who knows first hand which of the three boats performs better. I am seriously considering the purchase of one of them in the near future. I have been told that there is a wide range of performance among the three.

Wow! This is a dangerous question! Of course, everyone with a 27 will tell you that the 27 is best, everyone with a 28 will say that a 28 is best, etc.
I have been a member of the Lake Michigan Cape Dory Owners Association for about thirteen years, and have had the oportunity to talk to owners about their boats, and the opportunity to race against them at our annual Rendezvous.
The 27, with the single cylinder Diesel engine is underpowered. Owners seem to be disappointed with performance under power. Unfortunately, short of repowering, there is no easy fix to this problem.
The 27 also is a much slower sailer then the 28 or 30.
The PHRF rating of the 30 is less than that of the 28, and theoretically, it should sail faster than the 28, but in head to head races at our Rondi's, the 28's consistently sail faster. Perhaps this is because a cutter rig is a great cruising rig, but not a "go fast" rig.
