I think it is 4'10", but I am not sure. I have never measured it, and neither the original brochure, nor the owner's manual gives that spec.
I am 5'3" and can't quite stand up in the main cabin (the area in the v-berth has even less headroom).

My wife is 5' 0" and she can't stand up. There may be particular spots where it is higher, but most of the cabin has headroom of between 4'3" and 4'6". My daughter is 4'0" (age 8) and she has about 3 or 4 inches above her. Plenty for sitting, but nowheres enough to stand. I had a West Wight Potter 19 before, and there was more headroom in that boat than in the CD25. None the less, the CD25 is a great boat and there is plenty of sitting head room for people under
6 ft tall. (I'll let those over 6' speak for themselves.
