I had been using white lithum grease such as you would get from an auto store, but I have been thinking of switching to winch grease.
I beleive the most important issue is cleaning the scale off the rudder post first. I lift the post as much as possible and wet sandpaper it clean with #320. The sandpaper should enable you to reach down an inch or so into the shaft area. Then I flush the grit out. I do this every spring.
