That was in St Croix. Lots of rainbows but no conch or lobsters for that matter. The fish population was pretty dismal in the Virgin Islands.
We found lots of conch in Puerto Rico and even more in the Bahamas but by then, had decided they were not worth the trouble of cracking and cleaning them.

There’s not much left as far as conch is concerned. Haven’t been able to get a bowl of conch chowder for many years now.Jim Walsh wrote:Cool pic….did you find a treasure chest full of conch under the rainbow?

Not many in the Virgin Islands but tons in the Bahamas. We finally figured out how to crack and remove them from the shell. The part closest to the "guts" was pretty tender and could be eaten raw with wasabi sauce. The rest of the thing was more chewy than an old quahog foot. Once you get all the slime off, you need to pound the hell out of it with a meat mallet. The conch will find this amusing and still be nearly impossible to chew. That is when you soak it in lime juice for a few days. This does very little to make it more tender but does add a nice flavor. Now you are ready to dice it as small as possible so you can pretend to chew it a bit before swallowing.
Next time I go South, I will be bringing a meat grinder, Steve.

Those are great pictures Steve. Raven looks superb. The hard dodger looks nicely integrated. You had some tough sailing so I bet the dodger really paid off. Thanks for posting.
