When I switch on water pressure, the cabin lights dim and cause my chart plotter and radio to reboot on my CD31. There are no electrical problems that I am aware of. I want to replace my current water pressure unit with one that is as efficient as possible in terms of power consumption. I suspect that my current unit is 35 years old. Any suggestions for such a unit?

How is your battery? Does starting the engine also cause the rebooting issues? It is pretty simple to switch out the pressure pump if that is the problem. Non of them draw that much power for the limited time they are running if everything is okay. Checking connections would be a good first step if the water pump is the only thing that draws down the voltage. I would still check the battery first, Steve.

Before replacing your pump you may try cleaning your main ground. Look for a bolt deep, deep on the motor in the absolutely hardest place to reach. It should be there. Sounds like your pump start up may be lowering the voltage enough to effect the sensitive electronics. It shouldn't. So you have to check battery voltage and connections. If you have a battery monitor like a Link10 or Victron, that can be easy to do. Cause could be poor connections as mentioned, corroded ground or pump failing and causing very hard startup.
If you wind up replacing the pump, try to match up the type of pump, pressure switch and Gallons per minute rating to the current one. Femme's water pump is a PAR on demand pump with adjustable pressure switch. Unless you are adding faucets, match the GPM or you may get a lot more pump than you need as the faucets limit the flow rate.
