One Pot Oven Meal....Garlic Mashed Spuds & Turkey Bake

Post by Cathy Monaghan »

One Pot Oven Meal....Garlic Mashed Spuds & Turkey Bake......okay, I guess it's 2 pots -- one for the oven and one for the stove......

This simple meal is similar to Shephard's Pie except you'll be using turkey (or chicken) instead.

Ingredients:
  • 3 cans (5 oz. each) turkey or chicken
1 can (10 3/4 oz.) Condensed Cream of Mushroom with Roasted Garlic Soup
    1 Tbsp Worcestershire sauce
1 can (15.5 oz.) mixed vegetables, drained
    2 cups water
    3 Tbsp butter
    3/4 cup milk
2 cups instant mashed potato flakes or buds
Instructions:
Stir the turkey, 1/2 can of the soup, Worcestershire and vegetables in a 2-quart (8" x 11") baking dish.

Heat the water, butter and remaining soup in a 2-quart saucepan over high heat to a boil. Remove from the heat. Stir in the milk. Slowly stir in the potatoes. Spoon the potato mixture over the turkey mixture.

Bake at 400 deg. F. for 20 minutes or until hot.
