Has anyone had to replace any wheel steering components shives, cables quadrant or track and how did you access it? It is practically in an impossible place and the only thing we can think of doing is to remove the engine or cut a hatch in the cockpit floor

On Parfait there is an access panel from the starboard quarterberth to the aft end of the engine and the steering components. If you don't have one, it shouldn't be hard to cut one. Mine is large enough that my 220 pounds can squirm through to get more or less comfortably seated with the stuffing box at my feet. I have not tried facing aft, but it ought to be possible, maybe even with a temporary seat bridging the transmission, shaft, etc.
There is also an access panel from the port cockpit locker to the engine compartment. However, Parfait's has been compromised with the mounting of a charger on it. Another project.

I cut a 24" hatch in the cockpit floor.
During the past 14 month cruise to the Bahamas and back to Lake Ontario, it saved my butt many times.
I can't tell you how highly I value that hatch. It provides access to the steering quadrant, rear of engine, cutlass bearing, fuel tank, etc. Easy maintenance to check transmission, linkage, waterpump.
It's a proper 24"-4 dog-single lever-aluminum hatch. Cost 560.00 plus freight.
