Biscuits, for those with an oven

Tasty biscuits, easy and quick to make, fresh out of the oven are so yummy. Undoubtedly, with some experimenting, those with no oven could bake them in a pressure cooker.

Biscuits

Preheat oven to 400 degrees F and place rack in center of oven.
Makes 8 good-sized biscuits.

• 2 1/2 cups all-purpose flour
• 2 1/2 teaspoons baking powder
• 1/2 teaspoon kosher salt
• 1 tablespoon sugar
• 1/2 cup cold unsalted butter*
• 3/4 cup milk
• 1 large egg, lightly beaten

* lard may be substituted for even flakier, tastier but less healthful biscuits. Alternatively, margerine or vegetable shortening may be used.

In a large mixing bowl, stir together the flour, baking powder, salt, and sugar.
Cut the butter into the dry ingredients until the mixture resembles coarse crumbs (use two butter knives or fingertips).
Lightly beat egg and milk and add and stir until just combined. (The texture should be sticky, moist and lumpy.)
Place mixture on a lightly floured surface and knead the dough gently until it comes together and is a smooth dough.
Press dough out to an 8-9â€
