All this talk about crab and crab cakes from this thread http://www.capedory.org/board/viewtopic.php?t=25761 motivated me to make my very first post in the Underway Gourmet forum. I got this recipe from a chef at a hotel in Washington, DC last year. This is the basic recipe and it can easily be prepared on a boat. You can embellish it with Old Bay or whatever. Personally, I like them exactly this way with no modification.
Ingredients
2 slices firm white sandwich bread (day old bread)
1/2 lb jumbo lump crabmeat
pinch of salt
2 tablespoons mayonnaise or Miracle Whip
1/2 teaspoon Worcestershire sauce
1 large egg, beaten
Tear the bread into small pieces. Combine everything. Form into four patties. Cook in a frying pan with butter or oil until golden brown. Total preparation time should be under ten minutes.
