Welcome to the CD Food Forum

Post by Kquist »

I want to take a minute and introduce myself. My name is Kelle Quist and I am new to the CD boards. My husband and I are closing on our first CD this week and are excited to be part of the CD family.

I am a professionally trained chef and former owner of Ginger Pear Gourmet Personal Chef Services. I have taught cooking classes, developed recipes for a cookbook and for a couple of food companies. As a former housewares sales representative I have worked with some fabulous cutlery and cookware equipment and would be happy to answer any questions you may have. I closed my business last fall but still love to cook and share ideas.

I thought it would be great if we had a place to post some of our favorite recipes and share tips and tricks to make our onboard (and off) cooking experiences safer and more rewarding.

I just purchased an Origo 4100 two burner stove for the boat and will be experimenting with it over the winter so I can post accurate recipes here. I use a pressure cooker at home on a propane stove with good results. I'm unsure if I will be able to use it on the alcohol stove but will certainly give it a try.

Feel free to post here or PM me if you have specific questions. I will be posting one of my favorite chowder recipes soon. It is a perfect recipe for the cool fall days and very easy to make.

Best wishes,
Kelle

FISH CHOWDER

Post by Kquist »

FISH CHOWDER

This is a very simple recipe that can be modified to your taste. If you prefer shellfish by all means add that in place of the fish filet.

1 Tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup seeded and chopped bell pepper (red or green)
1/2 teaspoon minced garlic
1 teaspoon oregano (dried)
1 teaspoon basil (dried)
1 large can diced tomatoes, 28 - 32 ounces
1 pound fish filet, cut in 1" chunks (I prefer salt water fish)
Salt and pepper to taste

Saute onions, carrots and bell peppers until tender. Add garlic and cook for about 1 minute. Add tomatoes and seasoning. Cover and simmer (low to medium low heat) for about 10 minutes. Add fish and cover for 10 - 15 minutes (less time for shellfish). Add salt and pepper to taste.

Kelle, congratulations on your new boat. I predicted that whoever bought Bob's CD-30 would not be all that happy with the stove situation. To think that a chef is now aboard makes it kind of ironic.

You have a beautiful CD-30 once you get the stove straightened out.

I doubt I will be contributing any great recipes.

What I really want to know is where we can raft up so the crew of Raven can sample your fine cooking.

We will bring the wine, Steve.

Hi Steve,

Thanks, we are happy with our choice of boats. We will be at Norton's Marina in East Greenwich, RI. You are always welcome. I bought a 2 burner Origo nonpressurized alcohol stove for now. It arrived today.

I am posting another very simple recipe I usually make if we go camping. We like to fish so I am hoping the bay will be generous. We were down in your neck of the woods looking at a Pacific Seacraft a few months back. Beautiful area!
