How effective are the $1000 to $3000 radar units when used for weather avoidance ( thunderstorms, squall lines, etc.)?

Not really all that useful. Wrong frequencies for long distance weather radar, but you will see squalls crossing your path, and rain of course will appear, but that is close in..3-9 mile ranges. there may be some utility in knowing that the clouds ahead are dropping water, but what that would be I do not know. You aren't going to reverse course and go back to the dock, right?
THe things that are a threat to you..microbursts and tornadoes/waterspouts..these of course would not be detected by the radar except maybe during the actual storm.
To be as useful as you seem to wish, you would want to see what the weather radar itself sees I would suppose. Maybe the thing to do is to find a way to connect up to the internet remotely, onboard, then go to Intellicast or someother service for their products.
