I've always tried to keep it to 4 just because that's what the cockpit can comfortably fit, though have done 5 in a pinch with one person down below or on the foredeck.
My son just invited 6 friends for a total of 7 (he didn't check with me first). I hate to rain on his plans but that seems like a really bad idea (these are all adult men). Aside from comfort/moving around the boat/tacking issues, is there a safety issue with all that extra weight? They will be bringing gear for an overnight on an island so that's a lot of gear.
I once had maybe 30 gallons of water plus a bunch of gear and 3 passengers on a trip, the boat rode a bit low and seemed to handle more clumsily but it didn't seem like a safety issue.
But 7 people and gear has my danger radar activating. In choppy seas it seems like that could be a really unpleasant trip and possibly unsafe, too.
