We just had this a couple nights ago. It's really good and easy to make. Onboard, squash is one of the few vegetables that will keep for weeks and doesn't require refrigeration. (It's the perfect accompaniment to pork.)

Butternut Squash Homefries

INGREDIENTS
  • • ½ Tbsp – olive oil
    • ½ medium onion, chopped
    • ½ medium red bell pepper, chopped
    • ½ Tsp – pumpkin pie spice
    • Dash – cayenne pepper
    • 2 cups – peeled and cubed butternut squash
    • Salt and pepper to taste
    • ½ cup – fat-free chicken broth
DIRECTIONS

In a deep frying pan or sauté pan, heat olive oil until hot then add onions, chopped pepper, pumpkin pie spice and cayenne pepper. Stir and heat mixture until fragrant and the onion begin to brown. Add squash and sprinkle with a little salt and pepper. Stir mixture and heat for about 7 minutes. Add fat-free chicken broth, stir, cover and bring to a boil. Reduce heat and cook until squash is tender. Uncover and let the broth further reduce.

Makes 4 servings.
