Every time I come in from a sail I wonder if there is a correct way to fold my sails. What benefit does folding sails have? Is it best to continue folding them on the creases that are there? I would have thought that that might weaken the sails on the crease lines. Is there another way, e.g., what about just rolling them up? I haven't searched the internet or anywhere else to find if any sailmakers recommend a certain way of folding sails, and if anyone knows of such a spot please let me know.

Actually, rolling is the method recommended by sailmakers
As an example, see the link below for Sobstad sails...other sailmakers offer similar recommendations.
Any luffing (flogging) or creases from folding or stuffing shorten the life of the sail, but I've only seen "serious" racers actually roll their sails; cruisers are often shorthanded, making proper sail handling difficult.
As a singlehander, I sometimes stuff mine in a *very* oversize bag and then accordian-fold mine when I can.
