When do you use the cabin top cars VS the cars behind the winches? Inside the shrouds or outside?

I'm not familiar with a typhoon, but generally a small (100% or less) jib, can be routed inside of the shrouds and an overalpping (>100%) headsail will need to be run outside of the shrouds. You may want to move the cars from behind the winch to to forward to obtain a better sheeting angle.

The working jib is routed inside of the shrouds thru the cabin top cars. A larger headsail needs to be run outside of the shrouds to the cars on the toe rail behind the winches.
