Fish chowder

I make this frequently on the beach and it is always a big hit. I have never been abig one for measuring ingredients but here goes. This is for an 8qt pot.

6 herb ox chicken bullion cubes
4lbs diced potatoes
2 medium onions
8 stalks celery
2-3lbs white fish
1 stick butter
1 pint heavy cream
Parsley

Add celery onions potatoes and bullion to pot with enough water to cover. Cook until potatoes are done. Add fish and reduce heat. Throw in the stick of butter add the cream and sprinkle parsley on top. That is it. I have always used fish I caught myself and l have never tried using an oily fish. Cod and haddock are my favorites and if I have scallops or lobster meat that gets thrown in too. I fished for a living for 25 years so I'm spoiled but next time you catch a fish give this a try.
