The port side chain plate on my CD 27 is rusted, deteriorated and need to be replaced. This looks like a very difficult job. I am looking for guidance on how to do this as well as feedback on possibly using external plates instead

Been there, done that.
1) Cut a big hole in your liner below the chain plate, keeping in mind that you will
need to fabricate a new cover, and preferably add a shelf or compartment.
2) Go to an auto supply store and buy a magnet at the end of a long flexible extension.
Also get one with thumb activated grab hooks. Need will become obvious as you work.
3) Drill and cut to remove the old plate.
4) Make a plywood template and fit it under the deck. This will allow you to find the holes
you need to drill in your new 316 SS backing plate.
