Last year my 2 stroke outboard only used about 3 gallons of gas from my six gallon tank. I put fuel stabilizer in it but I'm kind of afraid to use it. I'd like to fill the tank with fresh gas and the proper oil mixture. Can anybody recommend what to do with the three gallons? I've thought of putting it in my truck but the oil in the gas worries me. Any experience or suggestions would be most appreciated. Thanks.

Old gas
I have a one gallon tank. I also use about 2-3 gal/season, and I've put 1/2 gallon in the SUV tank before with no problem. Don't know about 3 gal though.
Use it in your truck
Hi Jim, I mix the 2-stroke gas with the gas in my F-150 and have had no problems. I add it to a nearly full tank and pour in 1-2 gal of mixed gas. Too much could damage a catalytic converter, that would be a costly mistake. However, oily gas diluted within 15-20 gal of regular gas should not cause any problems.

I have a can of old gas that I have been trying to get rid of for awhile, living aboard full time means I dont have lawnmowers and such to stick it into. Have tried giving it away many times but of course no one wants it!

Since you used a fuel stabilizer, I would be inclined to mix fresh gas with the old gas and use it in the outboard. The biggest threat with old gas is by gumming up the carburetor. The fuel stabilizer would minimize that and the new gas would compound the cure.
A drop in octane rating may be a concern, but a two-stroke outboard is not a high compression engine, and the fresh gas should be adequate to prevent any knocking. If you notice any knocking, use a higher octane fuel for mixing.
The only other concern would be carbon build-up in the combustion chamber, but since a two stroke burns oil, I don't see that as a major concern, because it is inevitable anyway, and generally doesn't cause much trouble.

Gas stations have a waste portal you can poor into, they may charge you a couple bucks.
