I'm going to replace the hose from my head to the holding tank and I'm wondering which is better for the long run through the port settee, pvc or a high quality hose?

Hose, and go for the Vetus brand of sanitation hose, it is MUCH easier to work with. Head Hose vs PVC
I'd think that PVC would pose problems because of its ridgidity.
Sailboats have a lot of vibration. I'd worry about fatigue cracking.

I used pvc for the long straight run from head to holding tank beneath port side forward bunk. Made sure it was well supported and padded where it passed thru the bulkhead, and used those ss hose clamps with rubber to hold the rest of the run. There is some flex to both the pvc and the clamps and also to the connection of sanitation hose/pvc. It is no big deal to take apart should the need arise. Installed 5 yrs. back with no problems.

Fresh Water system?
A lot of times it is not the hoses that smell but the head itself!
I have a 28 ft. Cape Dory and the hoses have not been replaced in the past fifteen years. What I found out however is that we were picking up "stuff" in the water which lodged in the rim of the head behind the holes that water passes through to rinse out the head.
About 10 years ago I found enough room in front of the waste tank for a 5 gallon plastic water jug. I then ran a hose from the jug
to a Y valve by the head. Now I use it to rinse it out with fresh water whenever it is used.
No more problems with a smelly boat, and the pump system lasts
years longer without a rebuild or replacement as you do not have
a salt build up in the system.
Before spending a ton of money, try investing in a 5 gallon gas tank (about $10.00) a Y valve for around $15.00, and about an hour of work to install everything.
Worked for me!!
