To avoid hijacking Troy's thread, I'll ask this separately...I noticed Lee's mention of having installed a Lavac in a CD36. When we got her, Phoenix's canvas was Walnut Brown and I'm pretty sure it was original. It's a bit darker than True Brown with black "tweed" threads.

Don't plug the drain...
...add a trap instead. Water in the trap will prevent the cold air from draining out, and you'll still have the drain.
More important for ice box users than refrigeration; in the latter case, a plug might be appropriate.

Troy (and others who've installed a windlass on the CD36), How thick is the deck around the cleats? Lewmar says the V2/V3 is good for up to 2-1/4" with the standard kit. Looks like a 2" or so pad is needed to get the windlass even with the bow platform, so a special order looks to be neede...
